THE BEST VEGAN MUFFINS EVER!!!!

  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 banana
  • 1 cup thawed frozen strawberries mashed
  • 1/2 cup sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 1/2 cup flour
  • 1/8 cup coconut oil
  • 1/4-1/2 cup soymilk (until you get a thick consistency)

Mix ingredients, add soymilk as you see fit until your mixture is thick, but pourable.
Grease the muffin tins, and pour (should make about 9 muffins).

Bake at 375 degrees for about 10-15 minutes.

Serve with earth balance vegan butter. SO YUM!
